Apple Pancakes (Apfelpfannkuchen)

This German apple pancake recipe is super delicious and is loaded with apple flavor

The German apple pancake is no ordinary dish. It is more a souffle than a pancake and because of its puffy nature should be served immediately. Some apple pancakes are baked in the oven and others are cooked on top of the stove in a skillet, as is this recipe.

Apple Pancakes (Apfelpfannkuchen)
Makes approximately 6 pancakes

Filling
9 medium Granny Smith apples (or other tart variety)
5-6 Tablespoons butter
2 Tablespoons sugar
1 teaspoon cinnamon

Pancake mix
8 eggs
2 ½ cups whole milk
1 cup flour
6 Tablespoons butter
4 teaspoons sugar
½ teaspoon salt
Confectioner's sugar for dusting

To prepare the filling:
-Peel and core the apples. Slice in wedges (about ¼ inch thickness).
-Combine sugar and cinnamon.
-Melt butter in a skillet over medium heat.
-Add apple slices and top with the sugar and cinnamon mix.
-Stir gently, and cook until the slices begin to soften (they will begin to color).
-Remove from heat.

To make individual pancakes:
-Turn oven broiler on High. Place oven rack down about 7-8 inches.
-Use a whisk to combine eggs and milk. Do not overblend.
-Combine flour, sugar, and salt.
-Slowly add dry mix to wet mixture (about 1-2 tablespoonfuls at a time).
-Melt 1 tablespoon of the butter in a 10-inch skillet over medium heat.
-Add ½ cup batter and roll from side to side to cover skillet bottom.
-Let cook for about 30 seconds.
-Add ¾ cup of the apples and spread across pancake.
-Cook for an additional 2 ½ minutes. Make sure the bottom does not burn.
-Spread ½ cup of the batter on top of the apples in the skillet.
-Place skillet in oven to broil - about 3 minutes. Watch to make sure the pancake does not burn. The top should turn golden brown.

Top with a dusting of confectioner's sugar and serve immediately. (The pancake should easily slide onto a plate.)
