This Texas Beef Stew is fit for a crowd or great for making ahead and packing away in the freezer. You can spice it up with your choice of peppers - we typically use jalapenos. Beef Stew for
a Crowd 2 pounds beef (your
choice) trimmed and cut into small cubes Seasoning: 2 Tablespoons flour In a large pot add a touch of oil and brown beef cubes. Combine seasoning and add along with 1 cup water. Stir until thickened. Add salsa/tomatoes, barbecue sauce, onion, jalapenos, and corn. Cover with water and let cook for 2-3 hours. Add beans and continue cooking at least 2 hours. Check meat for tenderness. Add more water if necessary. Serve with thick
breads or over rice. Is also terrific over baked potatoes or cornbread.
Freezes well or can be made ahead of time for heating and serving the
