Low-Fat Scalloped Potatoes


Enjoy all the flavor of a rich and creamy scalloped potato dish without a lot of the fat

Scalloped potatoes are the ultimate side dish and can even become the main meal with a few chunks of ham thrown in. However, if you want to reduce the fat content, here's an easy recipe that will win over dieters and high-fat hangers-on.

Classic Low-Fat Scalloped Potatoes
(Makes 6-8 servings)

4-5 medium potatoes (about 1-3/4 pounds)
2 Tablespoons flour
1 teaspoon garlic powder
¼ teaspoon ground black pepper (or to taste)
½ medium onion, thinly sliced
¾ cup fat-free or 2% shredded cheese
1 ½ cups 1% milk
1 Tablespoon cornstarch
1 jalapeno, diced (optional)
3 slices 98% fat-free ham slices, cut into bite-sized pieces (optional)

Clean potatoes and peel if desired. Halve and cut into thin slices. Blanch in a boiling pot of water for about five minutes, then drain. In a separate bowl, mix flour, garlic powder, and black pepper.
Coat an 8x11x2-inch baking dish with cooking spray (generously for a crispier bottom). Begin layering: first a third of the potatoes, then half the flour blend, then half the onion slices and half the cheese. Add one-third more potato slices, then remaining flour mix, onions, and cheese. Finish with the last third of potato slices.
In another bowl, blend the milk and cornstarch. Pour over mixture. Preheat oven to 350 degrees F. Cover casserole and bake for about 30 minutes. Remove lid and continue baking (about 10 minutes) or until brown on top.

Let cool a few minutes to release and serve.

Notes:
-Can bake uncovered the entire time for a crispy bottom and sides.
-sprinkle diced jalapeno and/or ham pieces in between each layer (if desired).
-Before baking, top with additional low-fat or fat-free cheese if desired.
