Tex-Mex Chili Enchilada Bake


This delicious baked enchilada dish is easy to make with leftover chili

You know you're cooking a real Texas-based dish if you're making anything that doesn't call for chili - and then add a big ol' helping of it. No beans, of course. Never. Ever.

This is one of my all-time favorite recipes. It doesn't have many ingredients and is easy to throw together at the last minute. I do add beans to this dish, but never, never (did I already say that?) in the chili.

This enchilada recipe is also a great way to use leftover chili.

Made it a reduced-carbohydrate dish by using low-carb tortillas - it won't break the bank, but shouldn't be eaten during the induction phase.

Tex-Mex Chili Enchilada Bake for Two

4 tortillas (white flour or wheat or corn, whichever you prefer)
1 can Ranch beans
8 slices from a block of Monterey Jack cheese (about 1" wide x 2 ½" long)
2 cups leftover chili
3/4 green onions, chopped (you can substitute regular onions)
1 cup Cheddar, shredded
1 cup Ragu double cheese sauce (optional)

In each tortilla, add:
-2 slices Jack cheese (overlap to reach across tortilla)
-1/2 cup chili
-1/4 of the green onions (you can also reserve some for sprinkling on top)

Roll up and place in greased casserole dish
Add beans at both ends of casserole, but not on top of enchiladas
Spread ragu across enchiladas
Top with shredded Cheddar

Bake in preheated 350-degree oven for about forty minutes; longer for a crispier bottom.

Of course, you can always use your favorite canned chili if you get a craving for this dish and don't have any of the real stuff on hand. But it's a lot tastier. Next time you make chili, whip up a double batch and stick what's left away in the freezer. You don't have to wait for wintertime to have a big bowl of red - it's just as good in the summer.

I do have to add my own note about the Ragu cheese sauce. It adds another level of flavor when it's cooked into this particular dish. Just don't get any one ya' because it leaves a stain that is very hard - if not impossible - to get out.
